I think some of you can know it. Why in Chinesse restuarant isnt lamb?

If so, then it relates to a tradition dating all the way back to the Yuan Dynasty in 1279. The Mongol emperor, Genghis Khan issued a royal decree that all followers of Jewish and Muslim faith are to cease the act of slaughtering animals for food and instead adapt to Mongol culture/cuisine.

Geography also plays an important role on what is on the menu. Northern regions are closer to areas dominated by non-islamic cultures who are not subjected to the no-slaughtering restriction. From there, beef/lamb can be traded to northern China without breaking the ancient law. Since parts of southern China border the Pacific ocean, southern dining areas may feature seafood or water fowl dishes.
